Easy Gyro Bowls with Homemade Yellow Rice

These beef and lamb gyro bowls have been my go-to for a quick and easy meal lately. Mediterranean inspired and perfect for satisfying gyro over rice cravings at home on busy days. I like to make it with homemade yellow rice, hummus, cucumbers, parsley, tomatoes, and salad with fresh lemon juice.


Beef and Lamb Gyro

The star of this bowl is truly the gyro. I have attempted to make gyro from scratch in the past. Although it was delicious, it is not something I could easily make on a regular basis. I was so happy when I discovered fully cooked, ready to heat, and serve gyro slices while browsing the aisles at Costco! The brand is Daphne’s and can be found in the in the refrigerated aisle. It comes in 2-12oz bags which typically makes me about 10 bowls. I just sear it in a pan so it gets a little crispy and serve! Literally just takes a few minutes!

Homemade Yellow Rice

Not the main character, but equally important is the yellow rice for these gyro bowls! I tried to recreate the famous yellow rice that you would find at halal spots. The type of rice that is used is basmati long grain rice. Instead of water, cook the rice with chicken broth for more flavor. Add turmeric to give it that signature yellow color. A little goes a long way and be careful of stains! I also added some more spices – garlic powder, onion powder, cumin, salt, pepper. Last but not least, butter because it makes everything better. I cooked it all in a rice cooker but can be done in a pot like how you would cook rice regularly. Highly recommend a rice cooker if you don’t have one already because you can just set it and forget it!

Toppings for Gyro Bowls

Toppings is where it gets fun! Feel free to get creative with whatever you have in the fridge or whatever you’re in the mood for! It would be great with roasted vegetables, pickled veggies, or salad. Gyro and rice can be heavy so I typically like to balance it with fresh veggies like tomatoes, cucumbers, lettuce, and hummus. I dress the veggies in lemon juice, parsley, onions, and olive oil. The options are endless! Plus if I’m meal prepping this for the week, I could just switch up the toppings, and not feel like I’m eating the same thing every day!

Gyro Bowls

Cook Time 25 minutes
Servings 6

Ingredients

YELLOW RICE

  • 2 cups basmati rice
  • 3.5 cups chicken broth
  • ½ tsp turmeric
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cumin
  • a pinch of salt
  • a pinch of pepper
  • 1 tbs butter

TOPPINGS (quantity up to your preference)

  • beef and lamb gyro slices
  • cucumbers
  • tomatoes, diced and deseeded
  • lettuce, chopped
  • hummus
  • onion, chopped or sliced
  • lemons
  • parsley
  • salt to taste
  • pepper to taste

Instructions

  • Wash and rinse rice.
  • Add all ingredients for yellow rice to a rice cooker or pot and cook covered until soft and fluffy.
  • Sear gyro slices until slightly crispy.
  • Combine tomatoes, juice of lemon, onions, parsley, salt and pepper to taste.
  • Combine lettuce, juice of lemon, olive oil, onions, parsley, salt and pepper to taste.
  • Build the bowl with toppings to your preference.
