How to Make Easy Fish Sauce Wings
A recipe you need to try!
Fish sauce wings are full of classic Vietnamese flavors. It’s garlicky, sweet, savory, spicy, and a little tangy. My dad made these all the time for me growing up so thought I’d share a little twist on his recipe!

What Are Fish Sauce Wings?
Fish sauce wings are also known as cánh gà chiên nước mắm in Vietnamese. Just as it sounds, these are chicken wings coated in a fish sauce based sauce. It’s full of classic Vietnamese flavors. Everyone makes it differently but it usually include sweet, savory, spicy, and tangy elements.
My dad made these for me often growing up and these were always the best days. The recipe I’m sharing here is a spiced up version of his with a little bit of hot honey as the sweetener. The sauce also includes lots of garlic, lime, and fish sauce.

Secret Ingredient for Crispy Wings
The secret ingredient for crispy chicken wings (or crispy anything) is cornstarch. It is best to season or marinate the chicken first. The longer you marinate, the better. Then just before cooking the wings, cover every nook and cranny of the chicken wings in cornstarch. Dust off the excess powder and it’s good to go! The cornstarch not only makes the chicken crispy but it keeps it crispy and from becoming soggy quickly.

How to Cook Chicken Wings
The ideal way to cook wings for maximum crispness is to deep fry it in oil. However, I hate deep frying at home because it always makes such a big mess. Instead I like to air fry my chicken wings. I usually air fry them at 400°F for 20 minutes, flipping them halfway through. It doesn’t get as crispy as it would if you were to deep fry them but still pretty crispy! Air frying is also healthier because it doesn’t require oil and much easier cleanup!

Vietnamese Fish Sauce Wings
Ingredients
WING SAUCE:
- 2 tbs hot honey
- 1 tbs fish sauce
- 1 clove garlic, minced
- ½ lime, juiced
WING SEASONINGS:
- 12 chicken wings/drumettes
- 1 tsp chicken bouillon
- 2 tsp garlic powder
- 1 tbs fish sauce
- ¼ tsp black pepper
- 3 tbs cornstarch
GARNISH:
- 1 green onion, sliced
- 1 red jalapeño pepper
Instructions
- Mix together all wing sauce ingredients and set aside.
- Remove excess moisture from chicken with a paper towel.
- Season chicken with wing seasoning ingredients. The longer you let it marinate, the better.
- Coat chicken in cornstarch right before cooking. Shake off the excess.
- Cook wings however you like (I air fried mine at 400°F for 20 minutes, flip halfway through).
- Toss cooked wings in the sauce.
- Top with red jalapeño pepper, green onions, and enjoy!
