I love taking shortcuts in the kitchen and am a firm believer that you don’t need to make something from scratch for it to be delicious.

You’ll need the following ingredients to make these easy ube pancakes. You can find these at your local Filipino or other Asian grocery store.

    • plus additional ingredients according to package instructions
  • ube extract
  • ube halaya (aka ube jam or mashed ube)

Start by preparing the batter according to the instructions on the package of your favorite pancake mix.

Then, incorporate the irresistible flavor of ube by adding ube extract and ube halaya (mashed ube or ube jam) to the wet ingredients. Mix well to ensure the rich purple color and mashed ube are evenly distributed.

Mix the dry ingredients and wet ingredients separately before combining. This helps to avoid over-mixing the batter.

Stir just until the wet and dry ingredients are combined, some clumps in the batter are ok. For light and fluffy pancakes, be careful not to over mix.

  • 1 tsp ube extract
  • ¼ cup ube halaya (ube jam/mashed ube)
  • butter (as needed)

Ube Coconut Sauce

  • ½ cup coconut cream
  • ½ cup condensed milk
  • ½ tsp ube extract


Ube Pancakes

  • Make the batter according to the package instructions of your favorite pancake mix.
  • In a bowl, mix together the wet ingredients. In a separate bowl, mix together the dry ingredients.
  • Add the dry ingredients into the wet ingredients and stir just until it is combined. The key to light and fluffy pancakes is to not over-mix the batter. Some lumps are ok.
  • Heat a nonstick pan or griddle on medium heat. Use butter to your preference or as needed to help the pancakes from sticking.
  • Scoop about ¼ to ⅓ cup of the batter into the pan or griddle.
  • Cook the pancakes until bubbles start forming, then flip and cook until it is golden. This takes about 2 minutes on each side.
