Comforting lasagna soup recipe but with a Vietnamese twist! This is my take on the viral dish with an extra umami and savory oomph!

What is Lasagna Soup?

Lasagna soup is the latest viral hit on social media and it definitely lives up to the hype.

It’s like a soupy deconstructed lasagna that’s rich, creamy, and hearty.

It may be non-traditional but it is so comforting and delicious.

Everyone has their own take but it generally consists of broken lasagna pasta sheets, ground meat, a tomato based broth, and lots of cheese!

My version and the recipe I’m sharing here has a little Vietnamese twist – can you guess what it is?

The Secret Ingredient

My secret ingredient for this lasagna soup recipe is fish sauce!

I grew up eating spaghetti with fish sauce and even adding fish sauce into my Chef Boyardee canned ravioli.

As a Vietnamese-American it was my family’s way of adding some familiarity to western food.

Now when I eat red pasta sauces without fish sauce, I feel like something is missing.

It may sound strange at first but actually makes a lot of sense.

Italian cooking often uses anchovy and fish sauce is basically liquid anchovy.

It works so well with red pasta sauces, adding an extra umami and savory oomph!

Lasagna Soup Recipe Ingredients

Before you begin making this lasagna soup recipe, you’ll need the following ingredients:

  • Pasta: Wouldn’t be lasagna soup without lasagna pasta sheets!
  • Olive Oil: A little bit of olive oil to sauté the aromatics.
  • Aromatics: Onion and garlic gets the soup (and your kitchen) smelling amazing!
  • Meat: I am using ground beef. I recommend a leaner 90/10. You can also use Italian sausage, ground chicken, turkey, pork, or a blend.
  • Seasonings: The seasonings are a blend of dried parsley, oregano, red chili flakes, and Tony Chachere’s Creole Seasoning.
  • Tomato Paste: Adds a concentrated tomato flavor and more depth and richness to the soup.
  • Marinara: My favorite is Rao’s Marinara Sauce. You can also substitute with your favorite tomato-based, red pasta sauce.
  • Chicken Broth: The base for this soup. It is a lighter, more neutral base than beef broth.
  • Fish Sauce: Fish sauce adds so much umami and savory flavor (and don’t worry, it won’t be fishy). I like Red Boat or Three Crabs Brand fish sauce.
  • Heavy Cream: Heavy cream is super rich and adds a luxurious creaminess to this soup.
  • Cheese: Creamy shredded mozzarella and nutty grated parmesan are the cheese blend we are using for this recipe.
  • Fresh Herbs: Basil and parsley adds an herby brightness to balance out the richness of the soup.

For the ricotta topping, you’ll need the following ingredients:

  • Ricotta: Ricotta is a soft, creamy cheese that has a light, mild flavor. Whole milk ricotta is best but part-skim can be used as a substitute.
  • Parmesan: Parmesan is a hard, nutty cheese. Grated parmesan will blend nicely with the ricotta.
  • Salt & Pepper: Essential seasonings to enhance the flavors and add a little warmth.
  • Parsley: Finely chopped fresh parsley adds a fresh, herby, and slightly peppery taste.

How to Make Lasagna Soup

Once you have all the ingredients, this lasagna soup recipe is super easy to make!

It’s a one-pot meal which makes clean up a breeze!

This recipe takes about 40 minutes and makes roughly 4 servings.

Let’s get started and walk through how to make lasagna soup step-by-step so you can easily recreate it.

Step 1: Prep the Ingredients

Before turning on the stove, prep the ingredients:

  • break lasagna pasta sheets into small pieces
  • mince garlic
  • chop onions
  • chiffonade or thinly slice basil
  • finely chop fresh parsley

Step 2: Add Seasonings & Brown the Meat

In a large pot on medium heat, sauté onions and garlic until softened. This takes about 2-3 minutes.

I am using a 6.5 quart Caraway Dutch Oven.

Then add ground beef, dried parsley, dried oregano, red chili flakes, Tony Chachere’s Creole Seasoning, and tomato paste.

Mix it all together while breaking up the beef.

Cook until the meat is browned.

Step 3: Make the Broth

Once the beef is browned, add marinara sauce, chicken broth, and fish sauce.

When adding fish sauce it’s always best to add a little at a time since it is a salty ingredient. A little goes a long way.

Mix it all together and bring to a simmer.

Step 4: Cook the Pasta

Once the broth is bubbling, add in the broken lasagna pasta sheets.

Cook for about 15 minutes until the pasta is al dente or to your desired softness.

As a note, when the pasta cooks the starches will release into the broth making it thicker and some of the liquid will evaporate as well as you cook.

If the broth becomes too thick for your liking, you can add water or chicken broth to loosen it back up to your desired consistency.

Keep in mind that adding chicken broth will also add more saltiness.

Step 5: Finishing Touches

Finish off the lasagna soup with heavy cream, mozzarella, parmesan, and basil.

Mix until the cheeses melt into the broth and the soup becomes nice and creamy.

Taste test and adjust it to your liking.

Lastly, turn off the heat.

Step 6: Serve & Enjoy

Of course lasagna soup is best enjoyed warm for maximum coziness.

Serve it in bowls with a scoop of the ricotta topping, a sprinkle of fresh parsley, and enjoy!

Ricotta Topping For Lasagna Soup Recipe

To make the topping, add ricotta, parmesan, salt, pepper, and parsley to a mixing bowl.

Mix well to combine all of the ingredients.

Leftovers & Reheating

If you have any leftovers, store it in a sealed container in the fridge for up to 3 days.

Note that the pasta’s texture will soften over time as it sits in the broth and absorbs the liquid.

If the soup has thickened, then you can add more chicken broth or water to loosen it up.

To reheat, use the microwave or stovetop.

However, avoid reheating multiple times as that can cause the pasta to become too soft.

Only reheat the amount you want to eat.

Ingredients

  • 8 lasagna pasta sheets
  • olive oil
  • ½ onion, chopped
  • 6 garlic cloves, minced
  • 1 lb ground beef
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tsp red chili flakes
  • ½ tsp Tony Chachere's Creole Seasoning
  • 2 tbsp tomato paste
  • 3 cups (24 oz) marinara sauce
  • 4 cups (32 oz) chicken broth
  • 1 tsp fish sauce
  • ½ cup heavy cream
  • ¼ cup mozzarella, shredded
  • ¼ cup parmesan, grated
  • 8 basil leaves, chiffonade/sliced
  • parsley, chopped

Ricotta Topping:

  • 1 cup ricotta
  • ¼ cup parmesan, grated
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Roughly break apart the lasagna pasta sheets and set aside.
  • In a large pot on medium heat, sauté onions and garlic until softened. Then add ground beef, dried parsley, dried oregano, red chili flakes, Tony Chachere's Creole Seasoning, and tomato paste. Mix it all together while breaking up the beef.
  • Once the beef is browned, add marinara sauce, chicken broth, and fish sauce. Mix and bring to a simmer.
  • Then add in the broken lasagna pasta sheets and cook for about 15 minutes until al dente or to your desired softness.
  • Next, add heavy cream, mozzarella, parmesan, and basil. Mix until the cheeses melt and the soup becomes creamy.
  • Taste test and adjust it to your liking then turn off the heat.
  • Serve the lasagna soup warm in bowls with a scoop of the topping, sprinkle of fresh parsley, and enjoy!

Ricotta Topping:

  • To make the topping, add ricotta, parmesan, salt, pepper, and parsley to a mixing bowl and combine.
