Single Serve Sushi Bake: An Easy Meal for One

What is Sushi Bake?

Sushi bake is a fusion dish that is inspired by a sushi roll. It is like a casserole version of a California or Philadelphia Roll. It has the vibe of a warm baked sushi roll that is nice and creamy but it is by no means traditional sushi. Typically people make sushi bakes in casserole trays enough to feed a family or a small crowd. The recipe I’m sharing here is for a single serve sushi bake that includes baked salmon, sriracha mayo, cream cheese, and eel sauce. It’s the perfect easy meal for one when you want to satisfy the cravings but don’t want to make a huge casserole dish of it!

How to Cook a Single Serving

My favorite way of making a single serve sushi bake is in the air fryer. I was late to join the air fryer club but it’s definitely one of my favorite kitchen appliances now. I have the Instant Vortex Plus 6-in-1, which has a bake option. It is the perfect size for a single serving baking dish and more energy efficient than turning on a big oven. Another great appliance you can use for this is a toaster oven. However, if none of these are available to you, you can also use a traditional oven.

I have a variety of baking dishes that are perfect for single serving meals. I got most of them from Daiso which is a Japanese Dollar store. There are items there that cost more than a dollar, but they are pretty cheap nonetheless. I love looking at their dinnerware. There’s a bunch of different shapes, sizes, colors, and all very affordable. Daiso always has some interesting kitchen tools and gadgets too! Another single serving size baking dish I own is from Ikea. They have good kitchen basics, a little pricier than Daiso but still affordable.

Substitutions

SEAFOOD. Instead of salmon, you can also use imitation crab, shrimp, or canned tuna (preferably the Korean brand). Those are my favorites for sushi bake but substitute it with whatever you like!

EEL SAUCE. This is super easy to make at home, you can find the recipe here. However you can also buy it at the grocery store. Other names are unagi sauce or sushi sauce.

RICE. For my sushi bakes, I like to use short grain rice but I do not like to season it like sushi rice. However if you do, simply add rice vinegar, sugar, and salt in a ratio of your liking. You can also Google sushi rice recipes. If you do not have short grain rice on hand, you can substitute with your favorite type of white rice.

SPICY MAYO. You can make spicy mayo by mixing together Japanese mayo and sriracha. Adjust the amount of each depending on your liking and spice tolerance. You can also substitute with a store bought spicy mayo.

How to Eat Single Serve Sushi Bake

In my opinion, sushi bake is the best with roasted seaweed paper, extra spicy mayo and eel sauces on the side, avocado, and/or cucumbers. My perfect bite is making a little “taco” with the seaweed, fill it with sushi bake, top with avocado or cucumber, and a little drizzle of the extra sauces.

Ingredients

  • ¼ lb salmon
  • 2 tbs spicy mayo
  • 1 oz cream cheese
  • 1 cup white rice, cooked
  • furikake
  • eel sauce
  • 1 green onion, sliced

Instructions

  • Bake salmon at 400°F for 8 minutes.
  • In a bowl, mix together cooked salmon, spicy mayo, and cream cheese.
  • In a small baking dish, layer rice, furikake, salmon, a drizzle of eel sauce, and spicy mayo.
  • Bake at 400°F for 5 minutes until toasty.
  • Top with green onions, serve with seaweed, avocado, and enjoy!
